How do I fix Sea of Thieves searching the seas?

If you are stuck on Searching the Seas then you will need to restart the game. Per the Sea of Thieves support page, you will need to press the Xbox Guide button, highlight the Sea of Thieves tile, press the menu button and quit the game. You can then press the game tile again to restart it.
