They all have strengths and weaknesses, HOI4 is best for people who like combat, EU4 is best for people who like nation building, stellaris is probably the least mechanically good atm (though that will likely be fixed with DLC) but space politics and wars make it still fun to play.

HOI IV is fun alone. HOI IV is fun with randoms (most of the time). So if you just started the game and are feeling a little overwhelmed at the amount of stuff you have to learn just get through it all believe me it is definitely worth it.
