a 4K monitor will give you about 60%, maybe slightly more, of the performance you’d get with the 3440×1440 monitor. or, if you go 1/0.6, the 3440×1440 will give you about 167%, maybe slightly less, of the performance you’d get with the 4k monitor.
Although not quite as immersive as VR headsets, ultrawide monitors allow you to see more of your surroundings in games without constantly having to pan around, and they’re extremely well-suited for first-person games.
Monitors in themselves won’t make games better, and since the underlying, core technology of ultrawide and standard ratio monitors is the same (refresh rates, resolutions, HDR, color depth, etc.), the ultrawide factor in itself won’t boost performance.

In Conclusion. There is a large FPS drop you will see coming from 16:9, 1080p to 21:9, 1440p but with the help of some graphic settings downgrades you can get much closer to the performance you are accustomed to.

21 inches is fine. Considering tablets with much smaller screens as 1920×1080 and higher.
